Going From C4 To Gallo Blanco Cafe





This is the before and After of the restaurant.

The build out took about 6 Weeks.

We did the majority of the construction.

Everything was recycled, re-used, reclaimed. Tables were made using scrap wood .

We need to have more local sources for Hand Made food products. Imagine bieng able to go around the corner to buy tortillas.

Pollo Asado-marinade, 3hrs.

1 ea. Fresh local 2lb chicken. Cut in half remove back bone.

1 C. Fresh Orange juice, yes from real ones about 3 ea

1/2 C. Soy Sauce

1C. 1/2 canola and half olive oil. don't waste using extra virgin olive oil that should be used for dressings or to finish a dish.

1/4 C. Fresh garlic rough chopped

1 Ea. Bunch of green onion, rough chopped

1 Ea. White onion big chunks

1 Tbl. Paprika (hot)

1/2 C. Fresh Basil

1 bunch cilantro -rough chop, cut the ends of the cilantro off.

1 Tbl. Fresh ground black pepper.

1 tsp. Garlic Powder

1 tsp. Onion Powder


Toss all ingredients together & Refrigirate.
Throw on the cool part of the grill for 15min. Bone side down, flip and cook15min. On cool part of the grill.
Finish by placing it in the hot part of the grill to give it that nice char.
